Guest guest Posted June 16, 2008 Report Share Posted June 16, 2008 Transitioning to a vegetarian lifestyle has not been easy, as I live with people who are dedicated to an omnivorous lifestyle, who often don't think a meal is complete if it's meatless. I'd love to find some recipes that are designed to serve just one or two. I'll post more in a few days, as I need to be spending my time elsewhere right now, because the Thani exchange student my family has been hosting since August leaves tomorrow. This way I have some now and some tomorrow. I take my lunch to work so the leftovers make it handy. Its calleed 366 Ways to Cook Beans, Rice and Grains by Andrea Chesman. There are alot of great vegetarian style recipes. I use veggie broth or water where she suggest chicken/beef broth. This book is worth the investment. Also I made spaghetti one night with TVP, my kids never noticed. I'm serving bean dishes a couple of nights a week. I made sloppy joes with beans instead of meat. I know its tough. My family cooked steaks for Fathers Day...they smelled so good. (I'm a pretty new vegetarian) but I filled up on Tabouleh, salad and veggie baked beans (which my family didn't notice the bacon was missing!)
