It was my husbands favorite with ham and now it's his favorite with mushrooms. MIchelle Hashbrown Quiche with Mushrooms I package seasoned hashbrown potatoes 1/2 cup butter, melted 1 package fresh mushrooms, sliced 2 cups shredded cheese, any kind, try mexican or monterey jack or a combination 4 green onions with tops, chopped 2 eggs 1/2 cup milk, (I use soy) Put butter in the bottom of a deep pie pan. Press hashbrowns into this and bake at 425 for 25 minutes. Remove from oven and put 1 cup of shredded cheese on this, the onions and mushrooms, then last cup of cheese.
