Sharon,

     I've not tried the red carrots yet.  Do they taste differently than

the regular " orange " carrots?  They do look nice!  I have tried the (golden)

yellow carrots--pretty much the same, though I thought they weren't quite as

sweet as the others and a little on the strong (slightly bitter) side.  Maybe

it was just the ones I had.

 

     There are also red-and-white ( " chiogga " (sp?) is the name, I think)

beets.  When you slice them, the rings in the root part look really pretty,

with a red-and-white bulls-eye effect.  Best thing about beets, I think, is

when they have really nice & leafy tops.  I love chopping the tops and stems up

and steaming them for greens!  YUM!!!

 

     Speaking of greens, I remember a thread a good while back about edible

" weeds " .  I found a batch of " lambs-quarter " (weed) growing in a newer flower

bed I sort of set out this spring.  On impulse, I cut off a bunch of the leaves

and stems and chopped and steamed them up.  (Last I'd had them was years ago

when Mom cooked some as an " experiment " --she liked trying to eat the " free

weeds " just like I still do!) 

 

      My " weed " greens were REALLY good!  the stems even cooked up nice

and tender and the flavor was mild--quite a lot like young " baby " spinach

leaves.  My DH told me of eating greens made of sweet potato plant vines and

leaves while he was in Africa this year and 2 years ago--and my only exposure to

those yielded a very similar flavor of greens.  My DH  abhors spinach, but he

likes sweet potato leaf greens--I think he'd like Lamb's quarter greens as

well.  (I think I'll leave those " weed " plants out there in my flower bed,

after all.  I kinda like those funny " weed " greens--and they're FREE!)

& nbsp;This is not all about food but i hope it may help...even in a small

way..... & nbsp;

& nbsp;I am in a wheelchair due to a closed head injury compliments my x

husband....some of the things i did was music I listened to music low and with

headphones as it was my private time....I also kept a journal, sometimes it

helps to write your pain both physical and mental...when i was finally able

to...I went out..i had prove to myself i could do things myself and when i was

done at the end of the day although i was tired and had some pain i was so

proud of myself it just didn't seem so bad...and i got off my pain pills by

rewarding myself with every pill i didn't have to take....sometimes it was a

treat, comfort foods were great...sometimes i new CD sometimes a sticker for my

wheelchair lol you have my greatest wishes to feel better and also it really

will be better...a lot of people tell you that. but you have to tell you that

and take one day at a time.....
