Guest guest Posted June 13, 2008 Report Share Posted June 13, 2008 Rosemary, oregano, and basil are wonderful in soups, tomato sauces, dips, biscuits, bread, on pizza or added to the crust when you make it. One way we enjoy Rosemary, is to boil some small red potatoes in their skins and then drain and add to a hot skillet with some oil and brown the potatoes with some fresh rosemary needles. Dill is great in pasta dishes, on potato dishes, some salads. Basil is wonderful to make pesto with and in Bruschetta and tons more.. Parsley(good to eat fresh for your breath) and mint for use in Tabouli and raita, Cilantro in many mexican dishes. Go to www.allrecipes.com and type in fresh herbs and tons of recipes will come up using them. You can also type in an ingredient and it will give your recipes using that. Here is a good recipe Rosemary Carrots a.. 2 1/4 cups thinly sliced carrots a.. 1/2 cup water a.. 1 tablespoon snipped fresh or dried chives a.. 1 tablespoon brown sugar a.. 1 teaspoon McKays " Chicken " Style seasoning or Bills Best Chic'nish Seasoning(both are vegetarian) a.. 1/2 teaspoon snipped fresh rosemary or pinch dried rosemary, crushed a.. 1/8 teaspoon pepper 1.. Place carrots and water in a saucepan; cover and cook over medium heat for 9-11 minutes or until crisp-tender. Drain, reserving 2 tablespoons cooking liquid. Transfer carrots to a serving bowl and keep warm. 2.. In the same pan, combine chives, brown sugar, vegetarian " Chic'nish " seasoing, rosemary, pepper and reserved cooking liquid. Bring to a boil; stir until well mixed. Pour over the carrots and toss to coat. Nutrititional Yeast Flakes 3 T. Onion Powder 2 1/2 t. Garlic Powder 2 1/2 t. Salt 2 T. Parsley 1/2 t. Celery Salt 2 T. Italian Seasoning 1 t. Tumeric Mix together and store in a ziplock bag for use in recipes that call for Chicken Seasoning. It is good in Soups, breading meal and for use in making Scrambled Egg Tofu. I am working at an organic farm once a week in exchange for a farm share in the produce. I've gotten alot of fresh vegetables and strawberries and some fresh herbs. I've never cooked with alot of herbs and some are new to me. I have some fresh rosemary, spearmint and lemon balm. I dried the lemon balm just in the oven with the pilot light on because it didn't look like it would last long. What can I do with these and what is the best way to store them? I did get some sunchokes and we love those. I've sliced an roasted them, added them to stir fry and raw in salads. I love the fresh, organic vegetables and learning at the farm.
