Serves 4 2 c. fresh basil 1/2c. olive oil 2 cloves crushed garlic 3T. steamed, peeled potato (russet or red) 1/4 t. salt juice of one lemon Add all ingredients in a blender. I like to 'chop' first, and then puree. May add more lemon or salt to taste. Voila, enjoy mixed with angel hair pasta or add some to your mayo on sandwiches!
