Cucumber Boats 3 medium cucubers About 1 cup diced Quorn brand roast 2 hard-cooked eggs, chopped 1/2 cup shredded cheddar cheese 1/2 cup diced celery 1/4 cup mayonnaise 2 Tbs dill pickle relish 1 Tbs finely chopped green onion 1 tsp lemon juice Salt and pepper to taste Cut cucumbers in half lengthwise; remove and discard seeds. Cut a thin slice off bottom of cucumber shells if necessary so each sits flat. In a bowl, combine the remaining ingredients. Spoon into the cucumbers. Serve immediately.
