Guest guest Posted June 12, 2008 Report Share Posted June 12, 2008 Kelly, Kale is a wonderful green, but if you aren't terribly fond of greens to begin with, go cautiously. I would NOT say it can be subbed for spinach in a recipe, except for the fact that it is a leafy green like spinach. The flavors are different! Kale has a mild cabbage-like flavor...or Brussels sprouts, maybe. I LOVE it, but it is an acquired taste! Some people say to " boil " it a few minutes then pour off the water, add fresh and cook til tender. That loses a lot of the vitamins to pour off the water, although doing so is supposed to reduce the " bitterness " of these cabbage-family greens. Better to STEAM them to the desired degree of done-ness. (Some like their greens like their broccoli--crisp/tender. I like it just a little more " done " so that it is more tender than crisp! The longer they steam, the less they will be bitter, too.) I also like stir-frying chopped kale. A little light olive oil and some " hickory-smoke salt " , a bit of chopped mild onion, and maybe some minced garlic and it's good to go! I have made a MEAL out of a batch of stir-fried or steamed kale greens! Get some vegetable broth, or some vegetarian " chicken-flavor " broth, some cannelini beans (canned) and a bit of maybe onion or a touch of garlic--just a tiny bit--and add some freshly-chopped kale to the broth and stir in the beans--it makes a lovely soup called " Beans-and-greens " that I love! If the broth has flavor, the extra " zing " from the kale greens adds so much--and canellini beans REALLY taste good in this combination! Boy, it really is peppery. & nbsp; Below is what I made & nbsp; with some brown rice and it was really good. & nbsp; The rest of the bag I'm going to put in soup to counter some of the spicyness. & nbsp; Thanks, Kelly, FL & nbsp; Kale Saute in pan, oil, kale, Rosemary blend spices (from Sam's), basil, onion, 1/2 c. water (or veg broth) Add a can rinsed northern beans, and corn.
