I had brussel sprouts yesterday and I thought I would do something with the asparagus. Fresh veggies are so expensive here so most green beans and corn that I buy are canned. Guest guest Posted June 9, 2008 Report Share Posted June 9, 2008 Thanks for the tips. & nbsp; I never thought of making a soup or placing some in a sandwich. & nbsp; The reason I have a hard time with some canned veggies is.....my Mom would steam everything until it was a veggie mush so now I eat most of them steamed 3-4 minutes and still very crunchy. & nbsp; I could see canned asparagus making a great soup. I wouldn't eat canned & nbsp;potatoes until you mentioned ways to use them last year. & nbsp; Now I really enjoy them diced and cooked with Soyrizo, and onions, I make soft tacos and burritos with the finished mix. Guest guest Posted June 10, 2008 Report Share Posted June 10, 2008 Yeah, that is how I looked at them. They were already mushy, so why not make a creamy asparagus soup? You can even add them to another green pureed soup, or add them to some guacamole dip, like someone else suggested.
