Guest guest
This makes a nice breakfast to serve on the weekend. It assembles easily the night before, so all you do in the morning is bake it while the coffee or tea brews. Breakfast Pie (assembles the night before) 8 tsp Bacos or 8 breakfast strips from MSF cooked a crumbled 1/4 cup crushed corn flakes 1 Tbs butter 5 eggs, lightly beaten 1/2 cup milk 1/2 cup small-curd cottage cheese 1 & 1/2 cups shredded cheddar cheese 1 green onion, sliced 1/2 tsp salt 1/8 tsp pepper 2 & 1/2 cups frozen cubed hash brown potatoes In microwave dish, melt butter and toss with bacos or crumbled breakfast strips and the cornflakes; set aside. In a bowl, combine the eggs, milk, cottage cheese, cheddar cheese, onion, salt and pepper until blended. Stir in hash browns. Pour into a greased 9 inch pie plate. Sprinkle with bacos and cornflake mixture. Cover and refrigerate overnight. Remove from the refrigerator 30 minutes before baking. Bake, uncovered, at 325 for 40 to 50 minutes or until knife inserted near the center comes out clean. Let stand for 5 to 10 minutes before cutting.
