PT last week the little neighborhood market sold me almost a ten lb. Bag of ripe

bananas for 99 cents and I made a mountain of loaves.

Let me know how you like the finished

results when you try it. I like to sneak in

whole wheat flour whenever I can, too.

I wish I had some smushy bananas to make

some today! :)

I like to make this when I have bananas that have

gone too dark for my liking. This recipe easily doubles.

Once I added some white chocolate chips into the mix

and people really liked that variation. :)

 

Chocolate Banana Bread

 

1/2 cup butter or margarine, softened

1 cup sugar

2 eggs

1 cup mashed ripe bananas (about 3)

1/4 cup soy milk

1 tsp vanilla extract

1 1/2 cups all-purpose flour

1/2 cup whole wheat flour

1/4 cup baking cocoa

1 tsp baking soda

1 tsp salt

1/2 cup chocolate chips

1/2 cup chopped walnuts (optional)

 

In a mixing bowl cream the butter with the sugar. Add the

banana, eggs, soy milk, and vanilla; blend well. In another

bowl, sift together the flours with the cocoa, baking soda and

salt. Combine with the banana mixture until well blended

and smooth, then fold in the chocolate chips and walnuts

if desired. Transfer to a greased 9x5x3 inch loaf pan and

bake at 350 degrees for 60 to 65 minutes, or until a toothpick

inserted in center comes out clean. Cool for 10 minutes before

removing from the pan to cool on a wire rack.

Yield: 1 loaf
