Honey-Balsamic Vinaigrette - 3g carbohydrate; trace fiber

 

1/4 medium red onion, coarsely chopped

1/4 cup balsamic vinegar

2 tablespoons honey, (see note)

1 teaspoon Dijon-style mustard

1 teaspoon salt

Freshly ground black pepper

1/2 cup olive oil

 

 

 

 

 

Chop onion fine in the bowl of a food processor or a blender fitted with a metal

blade. Add vinegar, honey, mustard, salt and a few grindings of pepper; puree.

With the machine running, add oil in a slow, thin, steady stream to form an

emulsion.

 

Yield: 1 cup.
