Guest guest Posted June 6, 2008 Report Share Posted June 6, 2008 Garlic Spinach In Red Peppers 1 tbsp. olive oil 1 large clove garlic, minced 2 bunches spinach (or one bag), rinsed and trimmed 1 large red bell pepper olive oil 1 tbsp. freshly grated Parmesan or Romano cheese In large skillet, heat 1 tbsp. heat olive oil. Add garlic and saute for 1 to 2 minutes. (Do not brown.) Add spinach and cook until wilted, approximately 3 to 5 minutes. Drain off any remaining liquid. Meanwhile, clean red bell pepper and cut in half lengthwise. Place cut side down on broiler pan and brush lightly with olive oil. Broil until lightly brown on edges. Turn, brush again with olive oil.
