Balsamic Port Syrup with Onion Essence

 

2 1/2 cups balsamic vinegar

1 cup port wine

1 sweet onion, diced

 

 

 

 

Put all ingredients together and reduce over medium heat, down to 1/4 of its

liquid. Strain and discard onion.

 

This recipe yields about 3/4 cup.

 

Yield: 3/4 cup

ChupaNote: add 1 teaspoon red pepper flakes and 1 teaspoon sugar to the

reduction for some hot and sweet.
