Warm Spinach, Red Onion And Feta Salad

250 grams tender spinach -- (8 oz) without any tough stems

1 tablespoon olive oil

1 red onion -- sliced into thin rings

1 tablespoon sherry vinegar or balsamic vinegar

4 tablespoons chopped mint

175 grams feta cheese -- (6 oz) cubed

50 grams black kalamata olives (optional) (50-125g) (2-4 oz)

salt and freshly ground black pepper

 

Wash the spinach thoroughly in several changes of cold water and put it in a

colander to drain.

 

Heat the oil in a large saucepan, put in the onion and cook gently, covered,

for 2-3 minutes until beginning to soften.

 

Remove the onion from the pan and put the spinach in. Stir-fry over a high

heat for 1-2 minutes, until just wilted; remove from the heat.

 

Add the onion, vinegar, mint, feta cheese, and the olives if used. Mix

gently, season with salt and pepper, and serve at once.
