Gluten, Nut And Dairy Free Muffins

Amount Measure Ingredient -- Preparation Method

8 ounces gluten free plain flour

4 ounces dairy free spread

3 ounces caster sugar

4 ounces mixed dried fruit

1 standard egg -- beaten

4 teaspoons soya or rice milk (4-6)

2 teaspoons gluten free baking powder

 

Sift flour into bowl. Rub in spread finely. Add sugar and fruit. Mix to

very stiff batter with beaten egg and milk. Place spoonfuls into cake cases

or bun tins. Bake just above center of moderately hot 400 oven (200C or Gas

No 6) for 20-25 minutes. Makes 12 cakes.

 

Variation: You can change the fruit for blueberries, coconut, cherries or

plain chocolate chips. Be adventurous and add your favourite.
