Here in the Inland Northwest it has been cool and rainy. All we've

had so far is asparagus, lettuce, radishes, scallions and kale.

All I grow in my yard is herbs. I have chives, oregano, marjoram,

garlic chives, Italian parsley, summer savory, French Tarragon,

thyme, lemon thyme, rosemary, lemon balm and several varities of

basil. We had our first Pasta with Fresh Herbs Memorial weekend. I

did have to buy some basil at the store but all the rest was from my

garden.

 

Pasta With Fresh Herbs TNT

 

Cook pasta (I like spinach and regular fettucine) according to

directions. Drain pasta. Melt 3 or 4 Tbs. butter in your pasta pan

and return pasta to pot. Add about 1 cup evaporated milk, 1/2 cup

grated Parmesan cheese, 1 Tbs. chopped fresh parsley and 4 - 5 Tbs.

chopped mixed fresh herbs, the more variety the better! I ALWAYS

include basil. Stir all together and simmer a little while to

thicken the sauce and to coat the pasta. Serve immediately and pass

more Parmesan cheese.

 

Only fresh herbs will do for this recipe. I can't begin to tell you

how good this is! Serves 4

 

The origional recipe calls for cream but I have had good success

with the evaporated milk.
