Guest guest Posted June 4, 2008 Report Share Posted June 4, 2008 Egyptian Black-Eyed Pea and Spinach Salad 1/4 cup plus 2 tbsps. lemon juice 1/4 cup plus 3 tbsps. extra virgin olive oil 1/4 tsp. paprika 1 tsp. ground cumin 4 scallions, minced 1/2 red onion, chopped 1/4 cup fresh Italian parsley, chopped 1/4 cup fresh cilantro, chopped 1/2 green or red bell pepper, seeded and chopped 2 large tomatoes, seeded and chopped 1 minced jalapeno seeded pepper 1 lb. canned black-eyed peas 4 cups spinach leaves, stemmed Combine first 5 ingredients in a jar with a tight-fitting lid. Season with sea salt and black pepper to taste. Shake vigorously and set aside. Combine remaining ingredients, except spinach, in a bowl. Chill 30 to 60 minutes. You asked about a salad recipe with spinach-- " Can I substitute kale for spinach in this recipe? " was your question. Answer: DON " T do it! If it is a salad (with RAW spinach), the flavor of RAW kale is so different from spinach that I think it would not be appealing to you at all, especially if greens are not normally your " thing " . Kale is very peppery-bitter when raw (like the flavor of radishes!) The leaves and stems have a lot of that tangy-ness that, once cooked, gets much milder. It's maybe not as strong as mustard greens or turnip greens (which are really peppery!) There may be some who like their greens raw, but for a salad that normally has spinach for the greens, something a little milder would be a better substitute. Sorry about my previous ramble! I love to make them, add some freshly chopped onions and crumbled cornbread. Reminds me of when I was younger. This will be a nice change to my eating black eyed peas. I am so glad that I read this. I have not used or eaten kale in a long time. I am glad to know that it can't be swapped for spinach. It is my favorite salad green. Whooooo! You scared the dickens outta me!
