Guest guest Posted June 1, 2008 Report Share Posted June 1, 2008 Sweet Potato Specials 2 medium sweet potatoes 2 tablespoons finely chopped pecans 2 tablespoons raisins or chopped dates 2 teaspoons margarine or butter Pierce the sweet potatoes with a fork. Microwave them on high for 6 to 8 minutes (until tender). Cut them open and top with the pecans, raisins and butter. Yields 2 servings.
