Glazed Garlic Tofu - 2 pts, 21g Carbohydrate; 1g Dietary Fiber

14 garlic cloves -- peeled

1/4 teaspoon red pepper flakes

3 tablespoons soy sauce

1/2 cup vinegar

3 tablespoons honey

1/2 pound fresh tofu

 

Blend garlic, pepper flakes, soy sauce, vinegar and honey in a food processor or

blender. Transfer to a saucepan and cook, stirring occasionally, about 8 minutes

until reduced by about one-third.

 

Meanwhile, cut tofu into thick strips or large cubes. Add to garlic-and-vinegar

mixture and poach about 4 minutes until tofu is heated through.

 

Makes 4 servings

 

 

 

This combination makes a well-flavored tofu to serve with almost any rice

dishes. I sometimes very the flavor by adding Chinese five-spice powder or

toasted sesame seeds and fresh cilantro or coriander. Serve with plain boiled

rice or fried noodles.
