Guest guest Posted May 31, 2008 Report Share Posted May 31, 2008 * Exported from MasterCook * Chinese Coleslaw - 1 pt, 14g Carbohydrate; 5g Dietary Fiber Recipe By : " The 15 Minute Chinese Gourmet " by Elizabeth Chiu King Serving Size : 5 Preparation Time :0:00 Categories : Low Carb LowFat (less than 30%) Quick Slaw Spicy Vegan Vegetarian WW Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- Dressing: 2 teaspoons sugar 1 teaspoon Dijon mustard 1/4 teaspoon salt 1/8 teaspoon black pepper 2 tablespoons wine vinegar 2 tablespoons soy sauce 1 tablespoon sesame seed oil 1 teaspoon minced fresh garlic -- or 2 large cloves garlic finely chopped Slaw: 1 small head of cabbage -- about 1 pound 1 small carrot 2 tablespoons diced fresh scallions -- or 1 scallion with green top, diced Before you start, mix dressing ingredients together in large bowl until smooth. Rinse cabbage. Cut in half, then into quarters. Cut and discard core. Cut each section in half, lengthwise. Shred cabbage on grater into very thin pieces. Or feed cabbage wedges one by one through food processor with shredder blade. Add cabbage to dressing ingredients in large bowl. Pare carrot. Shred into thin pieces. Add carrot slivers to cabbage. toss vegetables in bowl with dressing and mix well. Sprinkle diced scallions on top and mix gently. Chill well before serving. Serve with entree of your choice, together with rice or noodle. Serves 4 to 6 A salad that doubles as a vegetable. It's very different from its Western cousin, but you'll like it even better. What's more, the flavor improves with age. This salad can be made ahead of time and refrigerated. Good for at least several days.
