Guest guest Posted May 31, 2008 Report Share Posted May 31, 2008 * Exported from MasterCook * Chinese Bean Sprout Pancakes - 5 pts, 4g Carbohydrate; 1g Dietary Fiber Recipe By : " The 15 Minute Chinese Gourmet " by Elizabeth Chiu King Serving Size : 3 Preparation Time :0:00 Categories : Low Carb Quick Spicy Vegetarian WW Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- Seasoning: 1/2 teaspoon salt 1/2 teaspoon sugar 1/4 teaspoon white pepper 1 teaspoon sesame oil Ingredients: 4 eggs -- well beaten 1 cup fresh bean sprouts -- washed and drained 2 tablespoons diced fresh scallions -- or 1 scallion with green top, diced 1/2 teaspoon minced fresh garlic -- or 1 large clove garlic, finely minced 2 tablespoons corn oil -- or vegetable or safflower oil Before you start, mix seasoning ingredients together in cup or small bowl. Mix beaten eggs with bean sprouts, scallions, and garlic in large bowl. Add seasoning and blend well. Heat skillet or wok on high for 30 seconds. Add 1/2 T. oil and swirl to coat skillet for 15 seconds longer. Spoon 1/3 cup of egg-sprout mixture into skillet and tilt skillet so that egg mixture is spread evenly. Fry pancake for 1 to 1 1/2 minutes until golden brown and egg is set. Turn and fry on the other side for about 1 minute or so until pancake is set. Remove to platter. If skillet gets too hot, turn heat to medium high. Repeat with remaining egg-sprout mixture until all is sued, and you have 4 pancakes. Serve hot with rice or roll pancakes as crepes and serve with a salad. These pancakes can also be served as a filling for pita bread or sandwiches. Makes 4 pancakes (serves 2 to 4). Note: This dish can double as a luncheon item by itself or as an entree at dinner.
