Chile Braised Cabbage - Hungary - 3 pts, 18g Carbohydrate; 5g Dietary Fiber

Amount Measure Ingredient -- Preparation Method

1 large onion -- peeled and sliced

1 fresh green chile pepper -- seeded and chopped

2 tablespoons olive oil

1/2 head white cabbage -- shredded

4 large tomatoes -- peeled and chopped

2 teaspoons paprika

1 teaspoon lime juice

1/3 cup vegetable stock

salt and freshly ground pepper to taste

 

Saute onion and chile pepper in oil 4-5 minutes until lightly browned. Add

remaining ingredients and bring to a boil.

 

Cover and cook over medium heat 8 minutes, turning vegetables occasionally until

tender.

 

Serves 4

 

 

 

Treated carefully, cabbage forms the basis of a wide range of interesting

dishes. This one comes from Hungary, where hot paprika is used. I used fresh

green chile pepper to give the heat and sweet paprika for the flavor.
