Here is my recipe for meatless meatballs. I made these and my

husband took them for a potluck at work and all the carnivores there

ate them and even asked for the recipe.

 

1c seasoned bread crumbs

1c grated cheese (optional,tofu can be substituted here)

1med onion (sauteed in a little oil,or water)

4 eggs

1c rolled oats

1c ground nuts

2T parsley

garlic and sage to taste

 

Saute onion in water or oil. Mix all ingredients together and form

into small balls. Fry them or bake them. I usually bake them on a

sprayed baking sheet in a 350*F oven for about 20-30 minutes turning

them once. Then remove from oven and place them in a casserole dish

and cover with favorite sauce and return to oven and bake until

bubbly.
