Guest guest Posted May 31, 2008 Report Share Posted May 31, 2008 Had it with a bowl of vegetable soup and some oyster crackers (not real oysters LOL Just the funny shape) Carrot and Daikon Salad 2 cups daikon or lo bok radish grated 1 medium carrot grated 1/2 tsp. salt 2 tbsps. rice wine vinegar 2 tsps. sugar 1 tbsp. light soy sauce Combine radish and carrot in bowl, sprinkle with salt and let stand for 30 minutes. Squeeze out accumulated liquid and transfer vegetables to a serving dish. Combine vinegar, sugar and soy sauce in a pan and bring just to a boil. Remove from heat and let cool before using. Pour dressing over vegetables, toss well to mix and refrigerate for 30 minutes before serving. Yields 4 to 6 servings. Quote Link to comment Share on other sites More sharing options...
