Hi!

I wholeheartedly agree with you on that count! Like Melissa, for my DH and me,

it's still the " almost " or " semi " -vegetarian stage, but I have not purchased

meat in at least 3 months, and we only eat it (DH much more often than me) maybe

once a week, sometimes less.

Katie, I can identify with what you wrote about, too. For several years, I have

had some puzzling " health problems " that doctors (including an " allergist " )

could not explain, but which plagued me, to varying degrees, year-around. My

suspicion was pesticide residues and/or hormone/antibiotic additives in " meats "

and a few other foods. ( I knew that anything with " corn products " in it, if not

strictly " organic " by label, was bad, too!)

Not eating meats this spring has been amazing to me--because this is the worst

time of year (normally) that I am bothered by these issues--espeically with skin

problems. Most of the time now, I not only feel better--much better--in a

general sense, but I also have an un-accustomed freedom from the skin issues. I

still live in chemically-saturated " corn-soybean-cattle/pork/poultry-dairy "

farming country, and this poses its own problems, environmentally. However, I am

thrilled that I have found this group and have enthusiastically followed several

of the recipes here. Even more, the ideas exchanged and the advice given by

group members is enormously encouraging and helpful!

Melissa, welcome! I hope you enjoy this group as much as I have and find here

the encouragement and friendship of these nice people! (And thank you, Katie,

for sharing your story!)

my body.
