guacamole with variation and great sandwich

Today is my 14th day with no meat. I'm actually starting to find it hard to

cook and buy meat for my family, who are avid meat eaters. I'm starting to

understand the not wanting your food mixed with meat food, etc. I really don't

miss it, except for fried southern chicken and gravy.

 

Today I made a great sandwich with my homemade guacamole that I changed

slightly. I baked a boca chicken patty, toasted a bun with cheese then added

the guacamole. Yum. If I had lettuce and good northern tomatoes I would have

added them. (Florida tomatoes are disgusting -- I've lived here over 25 years

and still can't stomach them).

 

Original guacamole

 

In food processor (I have a mini), mix onion, avocados, mayo, chili powder,

cumin, garlic salt (or just use garlic), hot sauce. Mix well. For a variation

today I also added about 1/2cup of mango/pineapple/chipolte salsa. Sorry I

don't measure. I do it by look and taste.

 

My original version is loved by everyone, even those who claim to not like

guacamole.

Congratulations on 2 weeks meat free!

 

There is a recipe from " Simply Heavenly " that is supposed to taste like fried

ch*cken. I don't know as I've never eaten that. However, I do make this recipe

and my omni DH says it is one of his favourites. The vege-kids like it too.

Below is a modified version (but not very modified because it is pretty good as

is).

P.S. Have you tried to grow your own tomatos? They are much better than the

store bought ones. Organic tomatos or heirloom tomatos might be worth a try...I

notice a difference in taste from conentional store bought ones.

 

Oven-Fried Gluten (don't let the word gluten turn you off...it's great

stuff...also known as seitan)

Adapted Simply Heavenly

 

Dry Mixture (for rolling)

1 3/4 cup crushed soda crackers (unsalted is better or just reduce added salt)

1 1/2 tsp garlic powder (more or less depending on what you like)

1/4 tsp sea salt (more or less depending on taste)

1/2 tsp black pepper (more or less)

experience with other spices...p**ltry seasoning might be nice

 

Combine the dry ingredients and set aside.

 

Wet Mixture

1 c finely chopped onion

2 tsp minced garlic

1 1/2 tsp margarine, melted

2 cups Vital Wheat Gluten

1/2 tsp sage

1 c nutritional yeast

2 tsp sea salt (more or less)

1 1/2 tsp black pepper

1 tsp paprika (or cayenne if you like it spicier)

1/4 c tahini

2 cups minus 4 TBSP water

 

melted margarine for rolling

2 Tsp oil (light - e.g., corn, canola)

 

Saute the onion and garlic in the margarine. Set aside.

In a large bowl put the 2 cups Vital Wheat Gluten. Add the dry ingredients

(sage, yeast, salt, pepper, paprika) and mix.

Add the sauted onion and garlic along with the tahini. Mix as best you can.

Add the water, mix and knead. Work all the ingredients through with your

fingers.

 

Pour the oil on a baking sheet or large casserole dish and set aside.

 

Take a piece of gluten (approximately 1/3 cup) and flatten it until is is

approximately 4 inches long, 2 inches wide, and 1/4 inch thick. This might be a

bit tricky. Brush with melted margarine and roll it up like a jelly roll -

starting with the short end. Next, coat the rolled gluten with the dry mixture.

Place it on the baking sheet with the seam side down. Repeat until all the

gluten is used up.

 

Bake at 375 for about 35-45 minutes. Turn once when golden brown on the bottom.

Do not overcook

 

Serve with vegetarian gravy.

 

The original recipe says that when cold it tastes very much like cold fried
