Guest guest Posted May 28, 2008 Report Share Posted May 28, 2008 This is my favorite way to cook tofu and I'll eat with with a vegetable stir fry over quinoa or brown rice. You can marinade with whatever sauce you enjoy and it will soak it up. Freezing it gives it a " meatier " and more dense texture. Enjoy! 1 lb of pressed tofu (firm or extra firm), frozen then thawed 1 cup vegetable stock 1-2 tbs. olive oil Before freezing tofu, drain liquid and gently press with paper towels to remove excess liquid. Slice into 6 cutlets and wrap in plastic, freeze. Thaw before cooking until all ice is gone. Press out extra liquid and marinade in a bowl with veg. stock for 30 minutes or more. I do marinade as well, yet I did not really notice much of a difference as I added the marinade to the stir fry itself. I also like to use it seared and add it in calzones with spinach, artichokes, and sun-dried tomatoes. Top with pizza sauce and some melted mozzerella. I am hungry, again!
