Guest guest Posted May 27, 2008 Report Share Posted May 27, 2008 The other night I made the " meat " loaf and the carrots au-gratin made with parmesan cheese from the recipe files. Oh my!!!! They were yummy! I got two loaves so now I'll freeze one for a day I don't want to cook. I also made the Cheddar " chicken " bake. I liked it but my hubby thought it was sort of bland so the next night I added taco seasonings to it. I then put a layer of vegetarian refried beans in a baking dish, added the new seasoned rice on top, put some soy cheddar cheese on top and baked it again. This time hubby loved it. I love all these recipes. You are making my life so simple. What's even better is not one dish has my hubby hated. He didn't like the carrots but he hates carrots anyway. But at least he ate some of them. Progress. :-)      Tami Your life is an occasion. I've been vegetarian for 20 years but like a recent poster, usually eat too many carbs and some junk food. I love bread, rice, pasta etc. but have cut those out in order to lose weight AGAIN. I lose but quickly gain back when I return to my regular eating habits. I eat a lot of fruits and veggies and sometimes worry that I don't get enough protein. I eat eggs, a little veggie cheese but feel that beans and legumes are too fattening. Thank you for the recent delicious sounding recipes especially the Eggs Jeanette, Tomato Couscous salad, Pickle relish etc. I tend to gravitate to recipes that have familiar ingredients and that do not seem too time consuming....I used to spend more time cooking but as I get older, don't enjoy it as much.
