Guest guest
Kids really enjoy this sandwich. Kiwifruit Peanut Butter Sandwiches 1/3 ripe banana, cut into small chunks 4 tablespoons cream cheese or Tofutti, @ room temp. 4good quality pre-sliced whole wheat bread, toasted lightly 4 tablespoons creamy peanut butter, regular or reduced-fat 2 kiwifruit, sliced into eight thick rounds Place the banana pieces and cream cheese into a bowl and mash together with a fork until will blended. Alternately, the ingredients can be placed in a food processor and pulsed until just blended. Spread banana cream cheese on one side of two pieces of toast. Spread peanut butter on the remaining two slices of toast. Top banana cream cheese toast slices with peanut butter toast slices, making two sandwiches. Cut each sandwich diagonally in half, then in quarters. (Cutting the sandwich before adding kiwifruit prevents it from slipping out.) Remove top toast quarters (peanut butter) from the sandwiches and place one slice of kiwifruit on the bottom toast quarters (banana cream cheese). Replace top slices, adding more peanut butter if necessary to hold kiwifruit in place. Yields 2 sandwiches.
