Guest guest Posted May 25, 2008 Report Share Posted May 25, 2008 Peanut Sauce with Tofu & Mustard Greens 3 tablespoons natural peanut butter smooth or crunchy 2 to 4 garlic cloves, peeled and smashed 1 to 2 teaspoons fresh ginger, minced 1 tablespoon molasses or maple syrup 2 teaspoons honey or maple syrup 1 tablespoon toasted sesame oil 1 teaspoon soy or tamari 1 teaspoon balsamic vinegar 1/2 chili pepper, minced or pinch pepper flakes (optional) salt and pepper to taste 1 1/2 cups vegetable stock or water to blend 1 tablespoon extra virgin olive oil 4 to 5 fresh tomatoes, cored and chopped into quarters 1 pound firm tofu, drained cut into small cubes 1/2 to 1 bunch fresh mustard greens, coarsely chopped In a blender, mix all ingredients except olive oil, tomatoes, tofu and greens. Adjust seasoning and/or stock as necessary; set aside. In large fry pan, sauté tomatoes in oil until softened. Add peanut sauce and tofu. Cover and cook over low heat, 7 to 10 minutes.
