One of the great things that has happened since I've become a vegetarian is that my meat loving husband has kindly given up meat most days so that we can cook the same meals. We enjoy cooking together. I'm including one of our favorite recipes. Artichoke and Mushroom Pasta Sauce ½ C sour cream ½ C Hellmann's mayonnaise (light or regular) ½ C grated parmesan cheese (canned works best in this recipe) ½ C skimmed milk (or less depending on desired consistency) 1 can artichokes, drained and chopped 10-12 oz. fresh mushrooms, sliced and sautéed 1. Mix first three ingredients and heat in a sauce pan over low heat until smooth. 2. Stir in about half the milk, the artichokes, and the mushrooms. Heat thoroughly. 3.
