Hi,

 

Welcome to the group, its a good one. I'm a fairly new vegetarian also, just

about 8 months. I'm enjoying it, and this group helps.

 

Sounds like a good recipe.

and Mushroom Pasta Sauce

 

½ C sour

cream

½ C Hellmann’s

mayonnaise (light or regular)

½ C grated

parmesan cheese (canned works best in this recipe)

½ C skimmed

milk (or less depending on desired consistency)

1 can

artichokes, drained and chopped

10-12 oz.

fresh mushrooms, sliced and sautéed

 

1. Mix first three ingredients and heat

in a sauce pan over low heat until smooth.

2. Stir in about half the milk, the

artichokes, and the mushrooms. Heat thoroughly.

3. Add additional milk to achieve

desired consistency.

4. Serve over freshly cooked, drained

pasta of choice.
