Guest guest Posted May 20, 2008 Report Share Posted May 20, 2008 Bowtie Salad with Grilled Vegetables 2 cups cooked red beans 2 tbsps. olive oil, plus more for brushing vegetables 2 tbsps. apple cider vinegar 1/2 lb. whole wheat bowtie pasta 4 tbsps. chopped fresh parsley salt and pepper to taste 3 to 4 tbsps.Italian vinaigrette 1 small onion 3 large tomatoes 2 large zucchini 3 tbsps. chopped fresh basil 1. Mix together the beans, olive oil, and vinegar, and leave the beans to marinate in the refrigerator for several hours or overnight. 2. Cook the pasta, drain it, and rinse under cold water until cool. Toss the pasta with the bean mixture. Stir in the parsley, salt and pepper, and enough vinaigrette to moisten. 3. Refrigerate until needed. 4. Finally, cook the veggies. If you're at a barbecue, this step can be done on the grill. Cut the onion, and tomatoes, and zucchini into chunks or slices, brush with olive oil, and place on skewers. 5. Grill, turning often, until lightly charred. Chop the vegetables, toss them into the pasta salad, add the basil, and serve. Serves 6.
