Guest guest Posted May 17, 2008 Report Share Posted May 17, 2008 Stuffed Olives with Sun Dried Tomatoes 1 8 oz. tub cream cheese with chive & onion or roasted garlic 1/2 cup drained sun dried tomatoes in oil, minced 1/4 cup fresh basil leaves, minced 1/2 teaspoon salt 1/2 teaspoon freshly ground black pepper 2 5.75 oz. cans colossal olives, drained red leaf lettuce leaves basil sprigs, optional In a medium bowl, combine cream cheese, sun dried tomatoes, basil, salt and pepper; mix well. Transfer mixture to a zip top plastic food storage bag or pastry bag with a 1/4-inch plain tip or open star tip. At this point, bag may be chilled until ready to serve. To serve, cut a tiny end off food storage bag. Pipe cheese mixture into each olive, letting a small amount of mixture mound out of olive. Transfer stuffed olives to a lettuce-lined serving plate or platter. Garnish with basil sprigs, if desired. Makes about 2 dozen stuffed olives.
