[VEGETARIAN RECIPES] Cucumber Mint Raita

Ingredients:

· Seedless Cucumber 1

· Mint Leaves 10

· Yogurt 1 1/2 cups

· Green Chiles 2

· Cumin Seeds Powder a pinch

· Black Pepper Powder a pinch

· Black Salt a pinch

· Salt to taste

· Oil 1/2 tsp

Method of preparation:

· Wash and roughly chop mint leaves.

· Wash, lightly peel and roughly chop the cucumber.

· Grind cucumber and mint leaves into smooth paste in a food processor.

· In a mixing bowl, mix ground cucumber and mint, yogurt, cumin powder,

black pepper powder, black salt and salt together.

· Heat oil in a small pan, add green chiles and fry for few seconds.

· Remove from heat and add to above raita.

· Serve chilled.

Notes: Make sure to scrape off the seeds from cucumber if any.
