I made a dish for my Mom that was based on a dish she would make when I was younger. In a pot combine peeled and diced potatoes, carrots, and rutabagas Partially cover with water, cook until tender. When the vegetable mixture is almost done, saute large onion cut in chunks (be sure to use oil when doing this step). Then add veggie bacon which has been cut into one inch pieces. When the veggies are done, drain and coarse mash (so small chunks are still seen). To serve, scoop veggie mixture into soup bowl and scoop onion/soy bacon over it. I don't remember how Mom got the recipe, but I am glad I was able to adapt it to a vegetarian version so I can make it for her. Even my meat-eating brother liked it.
