Guest guest Posted May 11, 2008 Report Share Posted May 11, 2008 Banana Nut Muffins 1 c flour 1/2 c sugar 2 1/2 t baking powder 1/2 t salt 1/3 c nuts 1/4 t soda 3/4 c oats 1/2 c milk 1 egg 3 T shortening (melted) 1/2 c well mashed bananas (instead of bananas use 2 c berries) sift together dry ingredients, stir in oats. add remaining ingredients till moistened. fill med muffin cups 2/3 full Bake 400 - 20 minutes 1 doz instead of egg, I use egg replacer instead of shortening I use applesauce Barb, Thunder Bay, Ontario, Canada Quote Link to comment Share on other sites More sharing options...

I bet some lentils would be great cooked in that veg. soup...
