I don't remember where the recipe came from, but have had it for years. Taco Salad calls for 1 lb ground be*f (I used Yves veggie ground round mexican) 1 pkg taco seasoning 1 head lettuce (used romain) 2 - 3 lrg diced tomatoes 1 lrg onion (I used red) 1/2 - 1 green pepper 1/2 - 1 lb med cheese (I used soy chedder) 1 small bottle Russian dressing 1 - 2 bags of corn chips brown veggie be*f, season with taco seasoning, cool. dice onions & pepper, grate cheese and mix with lettuce and dressing. add meat when cool. add the chips last so they have a bit of crunch Enjoy Barb, Thunder Bay, Ontario, Canada Quote Link to comment Share on other sites More sharing options...
