Guest guest
Molasses BBQ Beans 2 pounds navy or small white beans, soaked overnight 2 cups chopped white onions 2 cups chopped red onions 1/4 cup minced garlic 1/2 cup red wine vinegar 1 1/2 tablespoons Dijon mustard 1 1/4 tablespoons soy sauce 2 cups dark brown sugar 1/4 cup worcestershire sauce 1/4 cup ketchup 3 tablespoons dark chili powder 2 chopped canned chipotle chilies 1 pound canned plum tomatoes 1/2 cup molasses honey to taste salt to taste ground black pepper to taste Cook white beans according to directions on package until slightly tender. In a saucepan combine the remaining ingredients and simmer for 45 minutes. It is important to cook the beans and make the sauce at the same time so that the hot beans will absorb the hot sauce. Season to taste with honey, salt and pepper. The beans should cook an additional 30 minutes in the sauce so that they are tender and have fully absorbed the flavor. Makes 10 servings.
