Valencian Baked Vegetables And Rice

Amount Measure Ingredient -- Preparation Method

2 tablespoons olive oil

1 large onion -- finely chopped

4 cloves garlic -- crushed

2 medium carrots -- finely chopped

6 fresh tomatoes -- chopped, or tinned tomatoes,

drained, chopped (up to 8 fresh tomatoes)

8 ounces rice

1/2 teaspoon turmeric

1/4 teaspoon cayenne pepper

salt and freshly ground black pepper

6 ounces tinned chickpeas (optional)

 

Preheat the oven to 375F/190C/Gas Mark 5. Use a little of the oil to grease

and 8 x 8 inch oven to table baking dish. Heat the remaining oil in a large

pan and add the onion and garlic. Stir and cook over a moderate heat until

the onions soften. Add the carrots, then after a few minutes add the

tomatoes, reduce the heat to low and cook, stirring occasionally, for 10

minutes. Leave the lid off the pan. Add the rice, turmeric, cayenne

pepper, salt and black pepper and stir over the heat for 2 or 3 minutes.

Stir in the drained chickpeas, if using and boiling water to cover.

Transfer the contents of the pan to the baking dish and bake in the

preheated oven for 20 to 25 minutes or until the rice is tender and most of

the liquid is absorbed.
