Baked Avocados With Plum Sauce

Amount Measure Ingredient -- Preparation Method

8 ripe plums

2 large avocadoes

4 teaspoons French dressing -- see recipe

fresh herbs to garnish -- eg mint, parsley,

coriander (cilantro)

 

Place the plums in boiling water for 30 seconds to loosen the skins. Drain

and peel. Remove the stones from the plums and chop the flesh finely.

 

Divide the plum flesh evenly between 4 small ovenproof serving dishes.

 

Peel, halve and stone (pit) the avocados and place each half, cut side down,

on a plum base.

 

Bake in a preheated 200C/400F/Gas Mark 6 oven for 5 minutes or until the

avocados are just warmed through.

 

Pour 1 teaspoon of French dressing over each avocado and garnish with fresh

herbs. Serve at once.
