Guest guest Posted May 7, 2008 Report Share Posted May 7, 2008 Killer Mushroom Gravy 1 tablespoon minced shallots 2 cups minced mushrooms 1 teaspoon olive or canola oil 2 tablespoons any nut butter (almost any nut butter except peanut butter, which is too stong. tahini or almond butter is ok) 1 1/2 tablespoons miso 1/4 cup unbleached or whole wheat flour 2 cups water Saute shallots and mushrooms in oil. Combine nut butter, miso, flour, water in a blender. Add to mushrooms in skillet. Keep stirring fairly often until the mixture thickens. For quicker cooking, you can wimp out and thicken the mixture with cornstarch that has been mixed into a paste with a little water. Makes 4 1/2 cups.
