(My Grandmother gathered them and fixed " a mess of greens " every now and then each spring when the plants were young and tender. While I can say I did eat them, I thought they were pretty bitter, even the " young " ones. Just this morning I was musing about that, wondering seriously whether I could " develop a taste " for dandelion greens--funny that this topic suddenly pops up in this list on the same day! Even though I cannot say I " love " dandelion greens, it surely must be possible to learn to eat/like them more. I acquired a bunch of mustard or turnip greens several years ago and felt duty-bound to use them and not to waste the good food. I had not ever had fresh greens like that of that kind and wondered if they would taste all right. I ended up chopping them up (stems and all) and putting them into a pan with some olive oil and some minced up garlic and making it sort of like a " stir-fry " . Instead of being turned off by the " bitter " of the greens, I found the taste refreshing and I have liked these kinds of greens ever since! (Trunip, mustard, kale, bok-choi, and my very, very favorite of all, collards!) Just recently, I also discovered the green vegetable, " broccoli-rabe " . THIS is a real TREAT! They got the " best " , IMHO, of both broccoli (the little tiny green buds) AND the best of the " greens " --like a very tender, sweet collard or kale flavor--in the small, dark-green leaves. Oh, my! That is one good green, leafy vegetable! YUM-O! But dandelions...I look out into the yard (and we do NOT spray or dust our yard; nothing but rain has touched it for 5 years now)--I wonder...would those dandelions out there be something I could learn to LIKE eating?? --Just wondering...
