Guest guest Posted May 5, 2008 Report Share Posted May 5, 2008 Mint Wild Rice 2 cups wild rice, rinsed and drained 1 cup cooked long-grain rice 2 tablespoons oil 1 cup diced 1/4 " celery 1 cup diced 1/4 " onions 1 cup dried cherries 1 tablespoon finely grated orange zest 1 teaspoon dried thyme 1 cup pecan halves salt to taste freshly ground black pepper to taste 1/2 cup chopped fresh mint leaves Bring 4 cups of salted water to a boil in a heavy saucepan. Add the wild rice, reduce the heat to medium-low and continue to boil for 40 minutes, uncovered, adding more boiling water if necessary, until the rice is tender but not mushy. Drain and place in a large bowl. Toss with the cooked long-grain rice. Heat the oil in a nonstick skillet over low heat. Add the celery, onions, cherries, orange zest, thyme and pecans; cook, stirring occasionally until softened, about 10 to 15 minutes. Toss into the bowl with the rice. Season with salt and pepper.
