Guest guest Posted May 5, 2008 Report Share Posted May 5, 2008 Angel Hair with Tomatoes and Fresh Basil 1 1/2 lbs. fresh tomatoes extra-virgin olive oil or coconut oil 3 cloves garlic 1-bunch leeks, white part chopped 1/2 c finely grated Parmesan cheese 1 c loosely packed fresh basil leaves, chopped(8 oz dried) angel pasta, your choice Bring several quarts of water to a boil. Blanch, peel, and seed the tomatoes and chop coarsely. Heat the oil in a large skillet and sauté the garlic a few moments. Add the tomatoes, bring to a rapid simmer, and then cook over medium-high heat about 10 minutes, until the tomato liquid is reduced and beginning to thicken. Stir frequently during the last 5 minutes of cooking to prevent scorching. Meanwhile, cook the pasta in the reheated tomato-blanching water until al dente. Drain and transfer to a warm bowl. Add the basil to the tomato sauce and stir to distribute. Pour over the pasta, toss, and served immediately. Pass the Parmesan, if desired.
