Angel Hair with Tomatoes and Fresh Basil

 

1 1/2 lbs. fresh tomatoes

extra-virgin olive oil or coconut oil

3 cloves garlic

1-bunch leeks, white part chopped

1/2 c finely grated Parmesan cheese

1 c loosely packed fresh basil leaves, chopped(8 oz dried) angel pasta, your

choice

 

Bring several quarts of water to a boil.

Blanch, peel, and seed the tomatoes and chop coarsely.

Heat the oil in a large skillet and sauté the garlic a few moments. Add the

tomatoes, bring to a rapid simmer, and then cook over medium-high heat about 10

minutes, until the tomato liquid is reduced and beginning to thicken.

Stir frequently during the last 5 minutes of cooking to prevent scorching.

Meanwhile, cook the pasta in the reheated tomato-blanching water until al dente.

Drain and transfer to a warm bowl.

Add the basil to the tomato sauce and stir to distribute. Pour over the pasta,

toss, and served immediately.

Pass the Parmesan, if desired.

Chopped sautéed carrots may be added to this dish as well as diced chives

sprinkled on top when serving.
