Hummus and Chips

My wife Terry and I were out running around getting some shopping

done yesterday. We stopped around four p.m. for " lupper, " and were

talking about what to have later in the evening when we got hungry.

Terry suggested that we thaw out the hummus we had from the last time

we had falafel (and the first thing I ever made in my new VitaMix, by

the way) and make tortilla chips from the corn tortillas we had left

over from when I made enchiladas. Not a conventional combination, but

it turned out quite well as a dip!

 

Hummus - store-bought hummus, or your favorite recipe

 

Tortilla chips - slice corn tortillas into chip-shaped wedges. place

on cookie sheet in a single layer on parchment paper at 375 in

convection oven for 8-10 minutes. From The Convection Oven Bible. I'm

sure this could be adjusted for a conventional oven.

I also take pita bread, cut into wedges , drizzle with olive oil, sea salt, and

Italian seasoning...bake until crispy

And I should have said drizzle or spray olive oil over the tortillas as well.
