We stopped around four p.m. for " lupper, " and were talking about what to have later in the evening when we got hungry. Terry suggested that we thaw out the hummus we had from the last time we had falafel (and the first thing I ever made in my new VitaMix, by the way) and make tortilla chips from the corn tortillas we had left over from when I made enchiladas. Not a conventional combination, but it turned out quite well as a dip! Hummus - store-bought hummus, or your favorite recipe Tortilla chips - slice corn tortillas into chip-shaped wedges. place on cookie sheet in a single layer on parchment paper at 375 in convection oven for 8-10 minutes.
