Guest guest Posted May 3, 2008 Report Share Posted May 3, 2008 Roasted Garlic Garbanzo Dip 2 heads garlic 1 15oz can drained garbanzo beans 1/4 cup fresh lemon juice 1 tbsp. olive oil 1/4 cup ricotta cheese or 1/4 cup mashed tofu 1 tsp. salt 1/4 tsp. pepper 1/4 tsp. paprika 1/3 cup fresh chopped parsley Heat oven to 425 degrees. Wrap garlic in foil and bake 40 minutes. Remove from oven and cool. Squeeze garlic cloves into a food processor. Add remaining ingredients and puree until smooth.
