I would miss my soul food and fall off the wagon, then I decided I could try black-eyed peas and greens and cornbread in vegetarian versions. I like them even better. I really didn't have a hard time adjusting once I made my mind up to it. No one has to transition overnight. Pace yourself, get recipes together, try different grains, beans and vegetables you normally wouldn't try. Make veggie burgers and freeze them, make up batches of veggie meatless meatballs and freeze to use in spaghetti sauce or in meatball sandwiches, very inexpensive and tasty. Talk with your partner and family, make sure you work a plan that works for everyone. You have a wealth of information within this special group and plenty of recipes to try.
