Guest guest Posted May 1, 2008 Report Share Posted May 1, 2008 Savory White Beans 1 tablespoon olive oil 1 small garlic clove, minced 15 ounces canned white kidney beans, drained 1 1/2 teaspoons fresh oregano, sage or rosemary, finely chopped 2 tablespoons parsley, finely chopped 1/2 cup tomatoes, chopped 2 teaspoons red wine vinegar freshly ground pepper to taste In a small saucepan over medium heat, heat oil and garlic. Cook, stirring, about 1 minute. Add beans and herbs; cook to heat through. Stir in parsley, tomato, and red wine vinegar. Cook about 30 seconds longer.
