Guest guest Posted April 29, 2008 Report Share Posted April 29, 2008 I recently used soy milk to make biscuits from Bisquick mix, and the texture was kind of tough compared to using cow's milk. Deanna, when baking anything other than a yeast dough, I often use whole wheat pastry flour. It's not as high in fiber, but the nutrients are still there in the ground up germ and bran. I haven't tried biscuits with it, but I bet it would work well. I find that whole wheat biscuits are kind of hard. My all-purpose flour is about 2/3 hard white wheat, 1/3 soft white wheat. I mill it very fine. I can substitute 100%. In fact I haven't used processed white flour in 3 years.
